This is the facility's specialty dish, Ponchin Hot Pot Kaiseki Meal.
It first appeared more than 30 years ago. From there, it was repeatedly changed and abolished, and has evolved into a dish that is now said to be a specialty of the inn.
Ponchin Hot Pot (miso fondue) comes from the fact that the bubbles pop when the miso is boiled and that it makes a clicking sound every time the metal skewer hits the metal pot.
If you think of it as a miso version of cheese fondue, it's easiest to imagine.
