This spring, as we celebrated a special milestone of our 150th anniversary, we set a culinary theme of ``Weaving traditional Tosa cuisine into the future.''
Under Professor Junko Matsuzaki, professor emeritus of Kochi Prefectural University and a leading expert on Tosa traditional food culture, we learned deeply about the essence of Kochi prefecture's rich food culture, and our chief chef Matsumoto created a contemporary Arrange with interpretation.
Mr. Matsuzaki's signature dish, a masterpiece that breathes new life into the traditional Tosa dish mackerel sushi, includes fresh horse mackerel sashimi made with seasonal Tosa vinegar mandarin oranges, straw-grilled bonito with a fragrant aroma, and a spring-like dish. Enjoy gorgeous kaiseki cuisine that makes use of seasonal ingredients, such as Japanese black beef cutlets made with bamboo shoots, which herald the arrival of visitors.
