Perfect for you! The western chef of this facility will prepare spring French with a sense of creativity.
To commemorate the 150th anniversary, this spring's cooking theme is ``Weaving Tosa traditional food culture into the future.'' Under the guidance of Junko Matsuzaki, Professor Emeritus of Kochi Prefectural University and Chairman of Tosa Traditional Food Study Group, students will learn about the traditional food culture of Kochi Prefecture and arrange it in a modern style. Chief Chef Saito incorporated French elements into the country sushi that he learned from Mr. Matsuzaki, and pursued new possibilities. You can also enjoy Shimanto beef fillet steak served with sauce made from Tosa vinegar mandarin oranges, which is essential to Kochi's food culture. In addition, we prepared hors d'oeuvres using Tosa /Honkawa kenpaku pheasants and Japanese knotweed, a spring wild vegetable unique to Kochi Prefecture, to richly express Kochi's food culture. Enjoy a luxurious spring French course befitting the 150th anniversary.
